Haystack Mountain Gold Hill Cheese

Gold Hill was created by Haystack Mountain cheesemaker, Jackie Chang, and named for one of the original gold strikes in north-central Colorado. It is a Spanish/Portuguese style cheese similar to its big brother, Haystack Mountain's  Queso de Mano, but made with pasteurized goat milk and additional cultures to bring out a balanced buttery and tangy aroma. This firm natural rind is aged for six to twelve months, which allows it to develop its nutty, earthy notes. 

Serving suggestions: Makes a mean pesto, or grate or shave onto pasta, potatoes, salads, eggs, or vegetables. Melt in sandwiches, macaroni and cheese, or casseroles. Whip up a soufflé. On the cheese plate, pair with smoked meats, olives, and toasted nuts.

Pairing suggestions: Heifeweizen, or light-to full-bodied red wines such as Tempranillo or Garnacha, or spicy Spanish rosé.
